The Best Brown Butter Chocolate Chip Cookies

This is my go-to cookie recipe. The secret is browning the butter until it develops a deep, toffee-like aroma, and letting the dough rest overnight in the fridge.

Ingredients

  • 1 cup unsalted butter (browned)
  • 1 cup dark brown sugar
  • ½ cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 ¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 2 cups semi-sweet chocolate chips/chunks

Instructions

  1. Brown the butter: Melt the butter in a pan over medium heat. Keep swirling it until it foams and you see brown specks forming. Remove from heat immediately and let it cool for 15 minutes.
  2. Mix the browned butter with the brown and white sugars.
  3. Whisk in the eggs and vanilla until the mixture lightens.
  4. Fold in the dry ingredients (flour, baking soda, salt) just until combined.
  5. Add the chocolate chips.
  6. Important: Let the dough chill in the fridge overnight.
  7. Bake at 350°F (175°C) for 10-12 minutes.
  8. Sprinkle with flaky sea salt while hot!
